International Spa Cooking at Foodies Night In!

We are so excited to announce that SATW has been asked to co-host one of twitter’s newest traditions:  Foodies Night In!  #fni   The brainchild of Cooking with Caitlin – it’s a live tweetchat for those of us that love to eat (and cook) on Mondays from 4 – 6 pm Eastern Standard Time.

This week’s topic is International Food & since we’re hosting if you love spa and great food you won’t want to miss this chance to learn cooking tips and recipes and to meet a lot of  likeminded tweeters – half the fun in my opinion.  I’m asking some of our spa pals to stop by so you’ll have the chance to “chat” & bring some of their delish dishes & cooking tips home.

I’ve posted a recipe from Chiva Som spa in Thailand to get the ball rolling . . .  and after the chat we will link to and/or provide other recipes from spas that participate.  More information on Foodies Night In is at Cooking with Caitlin’s site.  Looking forward to tweeting with you tomorrow!  Please email me if you have recipes or want more information on how to participate.

Black Sticky Rice with Mango


  • 300 g (10 ½ oz) black glutinous rice
  • 300 g (10 ½ oz) white glutinous rice
  • 180 g (6 oz) brown sugar
  • 225 ml (8 fl oz/1 cup) coconut milk
  • 750 g (1 lb 10 oz) ripe mangoes, peeled and cut into bite-size wedges


Soak black glutinous rice and white glutinous rice separately in water overnight. Drain and combine. In a steamer, steam rice for 30-40 minutes. In a saucepan, over a medium heat, combine brown sugar and coconut milk and simmer for 7-10 minutes, stir constantly and ensure sugar has dissolved. Pour milk mixture into a large mining bowl, add cooked sticky rice and combine. Cover the mixing bowl with a lid or cling film and allow rice to absorb liquid for 30 minutes. Form the sticky rice into oval shapes by hand; there should be enough for 15 pieces. Place mango wedges on top and serve.
